This favorite of Lot 13 Blog community member Linda is a perfect low-calorie snack. Preparation is easy and requires little more than a mixing bowl and spoon! Don’t forget the toasted pita bread!
1 can black eyed peas, rinsed and drained
1 can black beans, rinsed and drained
2 – 3 medium tomatoes, diced
1 stalk celery, diced
1 red sweet pepper, diced
1/2 c. green onion, diced
1/2 tsp. crushed red pepper
1 T. cilantro (or 1 tsp. dried)
1 tsp. sugar
pinch cayenne pepper (optional)
8 – 10 oz. Your favorite Italian salad dressing (I use Kraft Zesty Italian)
Mix spices and dressing. Pour over other ingredients, stir together, and refrigerate at least 4 hours. (It’s better the next day.) Great with buttered toasted pita bread cut in wedges or with any nacho chip.
