RIP’s Meatballs

Named after the infamous member of the Beer Pong Championship Series (BPCS), these meatballs have been a staple in Lot 13. It hasn’t been until now that this recipe is finally revealed. If you want to get fancy, add a splash of your favorite bourbon or rum to the concoction for a little sweetness!

Ingredients:

  • 2 eggs
  • 1 lb. ground beef
  • 1/3 cup celery (chopped)
  • 1/4 cup onion
  • pinch of garlic
  • 1/4 cup Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 tbsp butter
  • 1 tsp salt
  • pepper
  • 1/4 cup water

Instructions:

  1. Saute onions and celery in butter and garlic.
  2. Combine all ingredients with the ground beef in a large bowl.  Make sure all ingredients are evenly distributed when you mix together.
  3. Roll meat into 24-30 even balls until they are firm on the outside.
  4. Bake at 325 degrees for 20 minutes, rotating after 10 minutes.
  5. Add your favorite pasta or BBQ sauce.
